Ramen Sushi

August, and it still hot! So, make youself some Ramen Sushi to cool down the summer heat!
Ingredients
  Ramen noodles 4 1⁄5 Ounce (kimchi ramyun noodles)
  Water 2 Cup (32 tbs)
  Carrot 1 Small, thinly sliced
  Cucumber 1 Small, thinly sliced
  Nori sheets 8
  Imitation crab meat 16 Ounce (crab select brand)
For the sauce
  Wasabi paste 1 Tablespoon
  Soy sauce 1 Tablespoon
  Vinegar 1 Teaspoon
Directions

MAKING
1. In pot pour water, bring it to a boil and cook the ramen noodles for 2-3 minutes or until cooked.
2. Once done drain and set aside.
3. Thinly slice the carrots and de-seeded cucumber into match stick size, set aside.
4. Place the nori sheet on the worktop, place the ramen noodles in the center, place the crab meat, cucumber and carrots, brush water towards the end and roll the sheet tightly.
5. Once done cut the sushi rolls diagonally, continue until all the filling it over, set aside.
6. In a bowl combine wasabi, soy sauce and vinegar, stir well.

SERVING
7. Serve the ramen sushi with the wasabi dressing on the side garnish with mint leaves.
