Beef Curry On Raisin Rice
|Brown rice flour||2 Teaspoon|
|Beef chuck||1 Pound, cut into 3/4-inch cubes|
|Safflower oil||2 Teaspoon|
|Onion powder||1 Teaspoon|
|Garlic||1 Clove (5 gm), pressed or minced|
|Curry powder||1 Teaspoon|
|Beef broth/Homemade stock||1 Cup (16 tbs)|
|Tomato juice||1 Cup (16 tbs)|
|Steamed brown rice||3 Cup (48 tbs)|
|Seedless raisins||1⁄2 Cup (8 tbs)|
|Slivered almonds||1⁄2 Cup (8 tbs)|
Put flour and salt into a paper bag.
Shake meat cubes in bag to cover well.
Heat oil in a heavy skillet.
Brown meat on all sides.
Add onion powder, garlic, basil, curry powder, and broth.
Cover and simmer until meat is tender, stirring occasionally.
Add tomato juice to desired consistency.
Serve on steamed brown rice mixed with raisins and almonds.
Variations: If you can use wheat and gluten, you can substitute whole wheat flour for the brown rice flour.
if you can use gluten but not wheat, you can substitute barley or flour the brown rice flour.
