The Best Chicken Katsu

For katsu sauce
  Ketchup 1⁄2 Cup (8 tbs)
  Worcestershire sauce 1⁄4 Cup (4 tbs)
  Soy sauce 2 Tablespoon
  Apple sauce 1 Tablespoon
  Spicy mustard 1 Tablespoon
  Garlic 1 Teaspoon, minced
  Black pepper To Taste
  Ginger juice/Ginger paste 1 Tablespoon
  Lemon 1⁄2 , juiced
  Brown sugar 2 Tablespoon
For katsu
  Chicken breast 3 , pounded
  Salt To Taste
  Garlic powder/Cajun seasoning To Taste
  Oil 1 Cup (16 tbs) (For deep frying)
For dredging
  Flour 1⁄4 Cup (4 tbs)
  Eggs 4 , beaten
  Panko bread crumbs 1⁄4 Cup (4 tbs)

1. In a pan, add all the sauce ingredients, stir well and simmer for about 2 min.
2. On a plate, place the chicken breasts and season with pepper, salt and garlic powder.
3. Coat each chicken breast, first into the all-purpose flour and then the whipped egg, repeat again and coat in the panko crumbs. Place on a baking sheet and refrigerate for 45 minutes.

4. In a wok, heat oil, lightly fry each chicken piece and remove on a wire rack. Double fry each piece until golden brown.

5. Slice the pieces into strips and serve with the sauce or prepare a sandwich.
