Gingery Eggplants Japanese Way

Japanese Eggplant recipe, a simple and yet tasty dish for a meal. It is often roasted or baked in a conventional oven. Try this solar cooking style of cooking eggplant and mark the difference.
Ingredients
  Japanese eggplants 2 , sliced lengthwise
  Salt To Taste
  Pepper To Taste
  Vegetable oil 1 Tablespoon
  Ginger 1 Tablespoon
  Soy sauce 1 Tablespoon
  Rice vinegar 1 Tablespoon
Directions

Slice Japanese eggplants and put them in a black pan. Sprinkle salt and pepper, drizzle vegetable oil. Now close it with a glass lid and place it in a solar heater. Check it after every hour. The eggplant is ready in 3 ½ hours. Replace it in a dish and dress it with grated ginger, rice vinegar and soy sauce. Mix it well and serve.
