This quick Ramen Noodle Soup recipe only takes 15 minutes to make, it's so easy! You can use so many different kinds of noodles...soba, udon, ramen, tomoshiraga somen, etc. The broth tastes so good!
Grapeseed oil | 1 Tablespoon | |
Minced garlic | 1 Tablespoon | |
Grated ginger | 1/2 Teaspoon | |
Scallion | 4 , sliced (white and green parts) | |
Chili sauce | 1/2 Teaspoon (Optional) | |
Chicken stock | 3 Cup (48 tbs) | |
Beef broth | 3 Cup (48 tbs) | |
Fish sauce | 1 Tablespoon | |
Soy sauce | 1 Tablespoon | |
Water | 1 Cup (16 tbs) | |
Eggs | 4 (Optional) | |
Ramen noodle/Lo mein noodles | 1 Pound (or somen) |
MAKING
1. In a Dutch oven or large pot, add grapeseed oil, garlic, ginger, scallions, and chilli sauce. Cook over medium high flame for 2-3 minutes or until fragrant and the scallions start to soften.
2. Add chicken stock, beef stock, fish sauce, soy sauce, and water. Bring to a boil over high flame.
3. Add eggs and cook them in broth for 5 minutes. Remove eggs from broth and set aside in a bowl.
4. Add the noodles to the boiling soup and cook for about 3 minutes or as per the package instructions.
SERVING
5. Garnish with scallions, sesame oil and serve soup hot with egg on top.
