Chicken Frankfurter Jambalaya
|Frankfurters||8 , sliced 1/4 inch thick|
|Uncooked rice||1 1⁄2 Cup (24 tbs)|
|Stewed tomatoes||2 Can (20 oz)|
|Water||1 1⁄2 Cup (24 tbs)|
|Garlic salt||1 1⁄2 Teaspoon|
|Diced cooked chicken/2 cans boned chicken, diced||2 Cup (32 tbs)|
|Diced green pepper||1⁄4 Cup (4 tbs)|
Saute frankfurters and rice in butter or margarine in a large frying pan, stirring often, until rice is golden.
Stir in tomatoes, water and the garlic salt; place chicken on top; cover.
Simmer, stirring once, 30 minutes, or until rice is tender and liquid is absorbed.
Spoon into a serving bowl; sprinkle with green pepper.
