Chicken And Shrimp Jambalaya

Ingredients
  Olive oil 2 Tablespoon
  Celery ribs 4 , sliced
  Onion 1 Large, chopped
  Garlic 4 Clove (20 gm), minced
  Green pepper 1 , chopped
  Bacon 6 Ounce, chopped (1 package, Fakin)
  Boneless chicken pieces 2 Cup (32 tbs) (bite size)
  Short grain brown rice 1 Cup (16 tbs) (raw)
  Tomatoes 2 Cup (32 tbs), chopped
  Clam juice 8 Ounce (1 bottle)
  Water 1 Cup (16 tbs)
  Thyme 1⁄2 Teaspoon
  Bay leaves 3
  Shrimp 1⁄2 Pound, deveined
  Scallions 1 Bunch (100 gm)
Directions

MAKING
1. In a large skillet add olive oil and warm.
2. Add garlic, pepper, celery and onion. Saute well.
3. Combine vegetables,chicken and bacon. Cook till it turns brown and is tender.
4. Add rice. Stir for 2 minutes.
5. Add tomatoes and liquid. Mix clam juice, bay leaves, thyme and water.
6. Simmer for 45 minutes keeping rice covered.
7. Add shrimps. Cook till the shrimps turn light pink in color.
8. Add green onions and stir.

FINALIZING
9. Taste and adjust the seasonings.

SERVING
10. Serve Chicken And Shrimp Jambalaya hot.
