Classic Jambalaya

Ingredients
  Bacon strip 3
  Onion 1 Medium, chopped
  Garlic 1 Clove (5 gm), minced
  Celery rib 1 , chopped
  Green pepper 1 , chopped
  Canned tomatoes 28 Ounce (1 Can)
  Canned tomato paste 3 Ounce (1/2 Of A 6 Ounce Can)
  Chicken broth 3 Cup (48 tbs)
  Thyme 1⁄2 Teaspoon
  Bay leaf 1
  Sugar 1 Teaspoon
  Salt 1 Teaspoon
  Pepper red 1 Dash
  Cooked pork sausage 3 , diced
  Diced cooked chicken 1 Cup (16 tbs)
  Cooked ham 1⁄2 Pound, cut into strips
  Shrimp 1 Pound
  Cooked rice 3 Cup (48 tbs)
  Minced parsley 1⁄4 Cup (4 tbs)
Directions

Fry bacon; drain and set aside.
Saute" onion, garlic, celery and pepper in bacon fat for a few minutes.
Add tomatoes, tomato paste, broth, thyme, bay leaf, sugar, salt and red pepper.
Simmer for 25 to 30 minutes.
Add meats, shrimp and rice.
Add more water if necessary.
Sprinkle with parsley and serve.
Makes 8 servings.
