Homemade Lemon Strawberry Jam
|Sliced strawberries||6 Cup (96 tbs)|
|Sugar||3 Cup (48 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Lemon peel||1 Tablespoon|
|Strawberry flavored gelatin||6 Ounce (2 Packages)|
In a glass measuring bowl, lightly crush berries.
Add sugar, lemon juice and peel; let stand for 4 hours.
Cook on high (9) for 10 to 15 minutes or until mixture reaches full boil, stirring occasionally.
Continue to cook on medium (5) for 10 minutes to simmer gently, stirring occasionally.
Remove from oven.
Stir in gelatin; let stand for 30 minutes.
Spoon jam into plastic freezer containers leaving 1/2 inch space at the top.
Let stand until room temperature.
Cover with lids. (Jam will thicken when cold).
Store in refrigerator or freezer.
