Blueberry Chia Jam

Make fresh berry jams using chia seeds to get the same jam texture without all the processed sugars and with all the benefits of chia seeds. This is a raw, vegetarian recipe for jam by Chef Joy Houston of The Delicious Revolution
Ingredients
  Chia seeds 3 Tablespoon, soaked with 1/2 cup apple juice for 1/2 hour
  Blueberries 1⁄2 Cup (8 tbs)
  Strawberries 1⁄2 Cup (8 tbs)
  Lemon juice 1 Tablespoon
  Acai powder 2 Tablespoon (Optional)
  Raw honey 1 Tablespoon
Directions

MAKING
1. In a blender, add the blueberries, strawberries and lemon juice together. Blend this mixture starting at a slow speed and then slowly increase the speed to 3 to get a jam like texture.
2. Add the acai powder, soaked chia seeds, raw honey and blend this for another 5 - 6 minutes on low speed until well combined.
3. Once done, remove the jam into a bowl and set it aside in the refrigerator until it becomes firm.

SERVING
4. Serve this jam over a flax cracker or a slice of brown bread.
