|Beets||4 Pound, ground|
|Grated lemon rind||2 Tablespoon|
|Ginger root||2 Ounce|
|Almonds||1⁄2 Pound, chopped|
Combine beets and just enough water to cover; cook slowly until tender.
Add sugar, lemon juice and rind and ginger root;cook for at least 1 hour or until thickened and clear.
Pour into sterilized jars; seal with paraffin.
