|3-in. cinnamon stick||1|
Peel, pit and crush peaches; add 1/2 cup water.
Bring to a boil in large kettle; cook, stirring, for 10 min- utes.
Measure peach mixture; add 3/4 cup sugar for each cup peach mixture.
Add cinnamon stick.
Bring to a boil; cook until thickened.
Skim and stir fre- quently.
Remove cinnamon stick; pour into hot ster- ilized jars.
Seal with paraffin.
