Choke cherry jam
|Choke cherries||3 Pound|
|Powdered pectin||1 3⁄4 Ounce|
|Sugar||5 Cup (80 tbs)|
"Grind chokecherries; cover with boiling water.
Let stand overnight.
Strain through cheesecloth; reserve juice.
Mix 3 1/2 cups juice and pectin; bring to a boil.
Bring to a rolling boil; boil for 1 minute.
Skim; pour into sterilized jars.
Seal with paraffin."
