Mandarin Jam

Ingredients
  Mandarin oranges 2 Pound (with peel)
  Sugar 1 3⁄4 Pound
  Brandy 30 Milliliter (1 small glass)
  Grated ginger 1 Teaspoon (small pieces)
Directions

GETTING READY
1) Preheat oven to 400°F.
2) Soak the clay cooking pot, in water.

MAKING
3) Remove the skin and seeds of mandarin.
4) Rinse the skin in hot water and cut in juliennes.
5) Cut the mandarin segments in small pieces.
6) In a bowl, mix the fruit, peel, sugar, ginger and brandy.

FINALIZING
7) Turn the fruit mixture in clay pot, put the lid on.
8) Bake in oven for 2 hours.
9) Check once, if too dry add little mandarin juice.

SERVING
10) Serve as desired.
