Roly-Poly Pudding With Jam, Treacle, Or Fruit Mince
|Baking powder||1⁄2 Teaspoon|
|Milk or water||(for boiling)|
Sieve the flour, baking powder and salt; add the butter and mix well.
Add enough milk to make a rather firm, dry dough.
Roll the dough into an oblong on a floured pastry board, making one end a little wider than the other.
Spread with jam, syrup or fruit mince to within 1" of the edge (if syrup is used, scatter 1 tblspn, breadcrumbs over it).
Moisten the edges of the crust and roll up from the narrow end, pressing it down as you roll.
Scald and flour a pudding cloth and put the Roly-Poly, wrapped in greased paper, in it.
Fold over the cloth and tie the ends firmly.
Boil for 11/2 hours.
