Spiced Peach Jam
|Ripe peaches||4 Cup (64 tbs), chopped|
|Lemon juice||1⁄2 Cup (8 tbs)|
|Sugar||7 1⁄2 Cup (120 tbs)|
|Liquid fruit pectin||3 Ounce (1/2 Bottle)|
Combine the peaches and lemon juice, then add the sugar and spices and mix well.
Place over high heat and bring to a full rolling boil.
Boil for 1 minute, stirring constantly.
Remove from heat and stir in pectin immediately.
Skim off foam and cool slightly.
Stir, skimming off foam, for 5 minutes.
Ladle into hot sterilized jars and seal.
