Red Chile Jam

Ingredients
  Fresh red chiles 12 Large (New Mexico Or California Types)
  Lemons 2 Small, quartered
  Apple cider vinegar 1⁄2 Cup (8 tbs)
  Sugar 3 Cup (48 tbs)
Directions

1 Remove seeds from chiles and chop finely, or process in a blender or food processor. Scrub out jars and boil.
2 Add lemons and vinegar to chiles and cook for about 30 minutes, or until chiles are well cooked. Remove lemon quarters and add sugar.
3 Boil for 10 minutes, or until jam reaches 9°F. above boiling or passes the sheet test. Spoon into sterilized jars and seal with paraffin.
