Mango Jam

Ingredients
  Mangoes 12
  Water 3⁄4 Cup (12 tbs)
  Lemon juice 1⁄4 Tablespoon
  Sugar 1 Cup (16 tbs)
  Peeled almonds 1⁄2 Cup (8 tbs), chopped
Directions

Peel half-ripe mangoes, slice and measure in cups.
Add 3/4 cup of water and 1/4 cup of lemon juice to each cup of fruit.
Place in a saucepan and cook till just soft.
Measure.
Add 1 cup of sugar to each cup of fruit pulp.
Half a cup of peeled and chopped almonds and 2 teaspoons of almond essence may be included to give more flavour.
Boil till jam sets.
