Mom'S Peach Jam
|Cooking apple||1 Medium, chopped|
|Lemons||2 , rind pared thinly|
|Peaches||3 Pound, skinned, stoned and sliced (1.5 Kilogram)|
|Water||10 Fluid Ounce (300 Milliliter)|
|Ground allspice||1 Teaspoon|
|Sugar||3 Pound (1.5 Kilogram)|
Tie the apple, lemon rind and cloves in a piece of muslin.
Put the peaches, water and muslin bag in an aluminium or stainless! steel pan.
Bring to the boil, stirring coni stantly, then simmer until the peaches are| soft.
Remove the muslin bag, pressing it against the side of the pan to extract all the liquid.
Stir the allspice and sugar into the peaches and continue stirring until the sugar has dissolved.
Bring to the boil and boil rapidly until setting point is reached.
Remove from the heat and allow to cool for 10 minutes before bottling.
