Mixed Berry Jam
|Crushed strawberries||1 Pint (1 Cup)|
|Raspberries||1 Pint, crushed (1 Cup)|
|Sugar||3 Cup (48 tbs)|
|Grated lemon peel||1⁄2 Teaspoon|
|Lemon juice||1 Tablespoon|
|Liquid fruit pectin||3 Ounce (1/2 Of 6 Ounce Package)|
1. Mix all ingredients except pectin in 3-quart casserole. Microwave uncovered on high 11 to 13 minutes, stirring after 5 minutes, until boiling; stir until sugar is dissolved.
2. Stir in pectin thoroughly; skim off foam. Immediately pour into hot, sterilized jars, leaving 1/4-inch headspace. Wipe rims of jars. Seal and refrigerate up to 3 weeks. Or seal and freeze up to 6 months. Thaw and stir before serving.
