Green Tomato Jam
|Green tomatoes||1 Kilogram, chopped (large size)|
|Grated ginger||1 1⁄2 Tablespoon|
|Grated orange rind||1 Tablespoon|
|Orange juice||2 Cup (32 tbs)|
|Cinnamon piece||2 Inch|
|Water||1 Cup (16 tbs)|
Place the sugar, chopped tomatoes, grated ginger, orange zest, orange juice and the water in a large pan. Mix gently and set aside for 1 hour so that the sugar melts.
After an hour, place the pan on a low flame and allow to simmer slowly. When the jam starts to thicken, remove from the fire and cool.
Put into jars and refrigerate.
