Fresh Plum Jam

Ingredients
  Fresh plums 4 Pound
  Water 1⁄2 Cup (8 tbs)
  Powdered pectin 1 3⁄4 Ounce (1 box)
  Sugar 8 Cup (128 tbs)
Directions

Wash plums, remove pits, and chop pulp.
Place in deep 6-quart kettle with water.
Simmer, covered, for 5 minutes.
Remove cover, add powdered pectin, and bring to a rapid boil, stirring rapidly all the while.
Add sugar and bring to a full rolling boil, stirring constantly.
Boil for 1 minute.
Remove from heat.
Skim off foam and continue to stir and skim by turns for 5 minutes.
Ladle into hot sterilized jars.
Seal.
