Wash grapefruit, slice finely, removing seeds.
Place in a basin, add boiling water, cover, stand overnight.
Place fruit and liquid in a large saucepan, simmer over a low heat for approximately 30 minutes or until rind is tender.
Add warmed sugar; stir over low heat until sugar dissolves.
Bring quickly to the boil, boil rapidly until jam jells when tested on a cold saucer, approximately 40 minutes.
Allow to cool for 10 minutes before pouring into hot sterilised jars, seal
