Damson Plum Jam
|Damson plums||5 Cup (80 tbs), coarsely chopped|
|Sugar||3 Cup (48 tbs)|
|Water||3⁄4 Cup (12 tbs)|
Combine all ingredients in a large sauce pot.
Bring slowly to a boil, stirring until sugar dissolves.
Cook rapidly to jellying point.
As mixture thickens, stir frequently to prevent sticking.
Pour hot into hot jars, leaving 1/4 inch head space.
Process 15 minutes in boiling water bath
