Fresh Apricot Jam

Ingredients
  Apricots 4 Pound
  Water 3⁄4 Pint
  Lemon juice 1
  Sugar 4 Pound
Directions

Wash the fruit, cut in halves and remove stones.
Crack these to remove kernels and blanch.
Put the fruit in a pan with the water, lemon juice and blanched kernels.
Simmer until tender and contents of pan reduced a little.
Add warm sugar, stir until dissolved then boil briskly about 15 minutes.
Test for setting, then pot and cover at once.
