Red Plum Jam

|Sugar||3 Cup (48 tbs)|
|Lemon juice||2 Tablespoon|
Halve, pit, and coarsely grind plums; measure 4 cups ground plums.
In 8- to 10-quart kettle or Dutch oven combine 4 cups ground plums, sugar, and lemon juice.
Let mixture stand for 1 hour.
Bring mixture to a full rolling boil (a boil thatcannot be stirred down).
Boil hard, uncovered, for 16 minutes or till syrup sheets off metal spoon.
Remove from heat; quickly skim off foam with metal spoon.
Ladle at once into hot, clean, half-pint jars, leaving 1/4 inch headspace.
Wipe jar rims; adjust lids.
Process in boiling water bath for 15 minutes (start timing when water boils).
