Peach Rum Jam

Ingredients
  Fully ripe peaches 3 Pound, peeled, finely chopped (4 Cups Chopped)
  Powdered fruit pectin 1 3⁄4 Ounce
  Sugar 5 Cup (80 tbs)
  Light rum 1⁄4 Cup (4 tbs)
Directions

Combine peaches and pectin in a very large saucepan or Dutch oven.
Place over high heat and bring to a full rolling boil, stirring constantly.
Immediately add all the sugar and stir.
Again bring to a full rolling boil and boil hard for 7 minute, stirring constantly.
Remove from heat; stir in rum.
Skim off foam with metal spoon.
Stir and skim for 5 minutes to cool slightly and prevent floating fruit.
Ladle into hot scalded jars or glasses.
Seal at once
