Wild Rose Petal Jam
|Wild rose petals||3 Cup (48 tbs) (White Base Discarded)|
|Warm water||2 Cup (32 tbs)|
|Granulated sugar||2 1⁄2 Cup (40 tbs)|
|Lemon juice||1 Teaspoon|
|Red food coloring||1 Drop|
Pour water over petals in pan and simmer, covered, over medium heat 10 minutes.
Lift out petals; set aside.
Measure 1 cup rose petal liquid.
Add sugar and honey, then cook 220°F.
Add petals and simmer over low heat 35 minutes.
Add lemon juice and simmer until thick.
Add coloring, pour into hot sterilized jars and cover with melted parafin.
