Cinnamon Plum Jam
|Sugar||7 Cup (112 tbs)|
|Coarsely ground plums||5 Cup (80 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄3 Cup (5.33 tbs)|
|Powdered fruit pectin||1 3⁄4 Ounce (1 Package)|
|Ground cinnamon||1⁄2 Teaspoon|
In a large kettle, combine sugar, plums, water and lemon juice.
Bring to a full rolling boil, stirring constantly.
Stir in pectin; return to a full rolling boil.
Boil 1 minute, stirring constantly.
Remove from the heat; stir in cinnamon.
Skim off foam.
Pour hot jam into hot jars, leaving 1/4-in.headspace.
Process for 10 minutes in a boiling-water bath.
