Jam Filled Cookies

Ingredients
  Butter/Margarine 1 Cup (16 tbs)
  Granulated sugar 1⁄2 Cup (8 tbs)
  Powdered sugar 1⁄2 Cup (8 tbs) (sifted)
  Egg 1
  Vanilla 1 1⁄2 Teaspoon
  All purpose flour 2 3⁄4 Cup (44 tbs)
  Baking soda 1⁄2 Teaspoon
  Cream of tartar 1⁄2 Teaspoon
Directions

Cream butter and sugars.
Beat in egg and vanilla.
Stir together dry ingredients; beat into egg mixture.
Chill.
On floured surface, roll dough to 1/8 inch; cut with floured scalloped cookie cutter.
Place 1/2 teaspoon Jam Filling in center of half the cookies.
Cut out center of remaining cookies; place over filling.
Seal.
Bake at 350° for 10 to 12 minutes.
Makes 30.
Jam Filling: Add 1 tablespoon water to 1/2 cup jam (any flavor); stir in 1 tablespoon cornstarch.
Cook and stir till thickened.
Cool.
