  Sweet red peppers 12 Large, chopped
  Cider vinegar 375 Milliliter (1 1/2 Cups)
  Coarse salt 15 Milliliter (1 Tablespoon)
  Water 125 Milliliter (1/2 Cup)
  Lemon 1 , unpeeled, cut into wedges
  Sugar 750 Milliliter (3 Cups)

–  Sprinkle sweet red peppers with coarse salt and let stand for 3 hours, then drain.
–  In a large saucepan, combine all ingredients except sugar, cover and cook over low heat for 30 minutes.
–  Remove lemon wedges. Add sugar and continue cooking process for 1 hour or until mixture has the consistency of jam. Stir from time to time.
–  Pour mixture into hot sterilized jars. Coat with paraffin wax.
