Queen Of Jams
|Peaches||3 Pound (7 Medium Peaches)|
|Figs||3 Pound (36 Figs)|
|Water||1⁄2 Cup (8 tbs)|
|Sugar||5 Pound (11 1/4 Cup)|
|Ground cinnamon||1⁄8 Teaspoon|
Peel the peaches (and the figs, if you prefer), and cut them in small pieces.
In a large pan, combine fruits and the water, and cook slowly until tender.
Mash fruit with a potato masher, add the sugar and cinnamon, stirring, and cook slowly until almost as thick as desired. (The jam will thicken when cool; to test consistency, place a little on a saucer and chill quickly in a freezer.) Pour into hot, sterilized jars; seal according to manufacturer's instructions.
