Fresh Strawberry Refrigerator Jam
|Strawberries||1 Pint, washed (2 Cups)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Powdered fruit pectin||2 Teaspoon|
Slice strawberries into 2-quart bowl.
Stir in sugar and pectin thoroughly.
MICROWAVE 3 to 4 MINUTES on HIGH, or until mixture comes to a full rolling boil.
MICROWAVE 5 MINUTES on '6', or until mixture is slightly thickened.
It will thicken more as it cools.
Pour into glasses.
Cover with plastic wrap.
Store in refrigerator.
For a thicker jam, add 1 teaspoon pectin.
NOTE: Fresh strawberry jam in a pretty glass makes a thoughtful gift for your hostess, a new neighbor or a good friend.
The recipe makes enough jam to fill a large coffee mug or 2 wine glasses.
1 package (10 to 12 ounces) frozen strawberries may be substituted for fresh.
Add 1 teaspoon pectin.
For ovens without solid state heat control, after mixture boils MICROWAVE 6 MINUTES on '5'.
