Happy Jalapeno Poppers

  Bacon slices 4 , chopped in 1-inch squares
  Extra virgin olive oil 1 Tablespoon
  Finely chopped onion 1⁄2 Cup (8 tbs)
  Finely chopped mushrooms 1⁄2 Cup (8 tbs)
  Cream cheese 8 Ounce, softened to room temperature
  Finely shredded monterey jack cheese 1⁄2 Cup (8 tbs)
  Shredded mozzarella cheese 1⁄2 Cup (8 tbs)
  Jalapeno peppers 2 , washed, and cut into two halves lengthwise, with seeds and fibers removed

Fry 4 slices of bacon (chopped) in a skillet over medium heat. Drain on paper toweling, and set aside. Discard bacon grease and add 1/2 to 1 tablespoon olive oil to the skillet where the bacon was fried. Add ½ cup finely chopped onionand ½ cup finely chopped mushrooms to the olive oil in the skillet and saute until softened. In a medium mixing bowl, combine sauteed onion and mushroom, the crisp, fried bacon bits , 8-oz. softened cream cheese, ½ cup shredded Monterey Jack cheese, and ½ cup shredded mozzarella cheese. Mix well. Stuff each jalapeno pepper half with a generous amount of the cheese mixture. Bake at 350 degrees for about 15 minutes. Place on a serving plate, and serve immediately! These are great for sports event party, or as an appetizer to a Mexican-themed meal! Enjoy!!! --Betty
