Denver Summer Relish

Ingredients
  Roma tomatoes 1 Pound, rinsed, cored and cut into 1/4 inch dice
  Diced onions 2 Cup (32 tbs) (1/4 Inch)
  Golden raisins 1 Cup (16 tbs)
  White vinegar 1 Cup (16 tbs) (Distilled / Rice / Wine)
  Sugar 1 Cup (16 tbs)
  Minced fresh ginger 2 Tablespoon
  Fresh jalapeno pepper 2 Ounce, rinsed, stemmed, seeded and chopped (2 Whole)
  Salt To Taste
Directions

1. In a 5- to 6-quart pan, combine tomatoes, onions, raisins, vinegar, sugar, ginger, and chilies. Boil over high heat, stirring often, until mixture is reduced to 3 cups, about 20 minutes.
2. Let cool at least 20 minutes. Season to taste with salt; stir.
