Minestrone is a thick Italian soup variety made with beef broth, white beans, spinach, garlic, parsley, tomatoes, celery and
pasta/rice. A vegan variation of the minestrone can be made by substituting the beef broth with its counterpart vegetable broth. Minestrone is best enjoyed either with grated cheese or as an accompaniment to light red wine, or white wine.
