Italian Wedding Soup also known as Wedding Soup, is a hearty soup recipe prepared with meat loaf mix (ground beef and pork), chicken stew, parsley, cheese, bread crumbs, carrots, onion, spinach and garlic. Wedding soup sometimes also contain pasta, noodles, cavatelli, lentils, or shredded chicken. A variation to the Italian wedding soup can be made by substituting chicken with ham or prosciutto and adding white cannelloni. The wediing soup is often served hot with grated parmesan cheese.
