Italian Fish

Italian fish recipes are varied from soups, stews and roasts to stuffed squids and bakes. Baccalà - Dried cod, Calamari in Zimino - Stewed Squids and Sogliola alla Fiorentina - Florentine-style Sole are a few Italian fish preparations. Fresh herbs and vegetables are preferred over dried and powdered spices. The fish used in Italian fish recipes are either fresh water or salt water as Italy has plenty of rivers and lakes as well as sea-coasts.
