Zuppa Di Legumi

Zuppa Di Legumi is simply by far the most delicious vegetable soup that I have had. This dish is simple and tasty. Serve the Zuppa Di Legumi for your family , I am sure they will love it!
Ingredients
  Butter 3 Tablespoon
  Garlic 1 Clove (5 gm), chopped
  Onion 1 , chopped
  Cauliflower head 1⁄4
  Carrots 2 , peeled
  Celery stalks 2
  Leek 1 , thoroughly washed
  Potato 1 , peeled
  Spinach 1 Cup (16 tbs)
  Tomatoes 2 , peeled
  Chicken stock 1 Quart
  Salt 1⁄2 Teaspoon
  Pepper 1 Pinch
  Cayenne 1 Pinch
  Parsley 1 Tablespoon
  Grated parmesan 1 Tablespoon
Directions

Heat butter in a large pot and cook garlic and onion for 5 minutes.
Wash and chop the vegetables.
Add to the pot and cook for 5-7 minutes.
Add stock and seasonings, and cook gently for 30-45 minutes.
When ready to serve, stir in parsley.
Spoon into bowls and sprinkle grated cheese on top.
