Petti Di Polio Al Marsala

Ingredients
  Chicken breasts 3
  Salt 1⁄2 Teaspoon
  Pepper 1 Pinch
  Eggs 2
  Breadcrumbs 1 Cup (16 tbs)
  Parmesan cheese 2 Ounce, grated
  Butter 2 Ounce
  Olive oil 2 Tablespoon
  Marsala wine 1 Cup (16 tbs)
Directions

Skin, bone, and cut chicken breasts in half.
Pound lightly to flatten.
Beat salt and pepper into eggs.
Combine breadcrumbs and grated cheese.
Dip chicken in the egg mixture, then coat well with breadcrumbs.
Heat butter and oil in a large frying pan, and cook the chicken for 2-3 minutes on each side until light golden.
Add Marsala, cover and reduce heat.
Cook gently for 15-20 minutes, turning occasionally.
Remove chicken to heated platter, adjust seasonings in sauce, pour over chicken and serve.
