Cozze Al Pomodoro
|Olive oil||4 Tablespoon|
|Green onions||4 , chopped|
|Garlic||2 Clove (10 gm), chopped|
|Tomatoes||2 , peeled and chopped|
|White wine||4 Ounce|
|Chili peppers||1 Pinch|
|Chopped parsley||2 Tablespoon|
Scrape the mussels and remove beards, then wash and scrub very well until no trace of sand remains.
Heat the oil in a large pot, and cook the onion and garlic for 5 minutes.
Stir in the tomatoes, wine and seasonings, and simmer for 5 minutes.
Add the mussels and cook, covered, until they open.
Serve sprinkled with chopped parsley.
