Insalata Di Carote
Adapted from Singing Chef Pasquale Cookery Show on PBS Canada.
|Raisins||1⁄2 Cup (8 tbs)|
|Walnuts||1⁄2 Cup (8 tbs), chopped|
|Olive oil||3 Tablespoon|
|Red wine vinegar||1 Tablespoon|
Peel carrots and shred into long strips on the large holed side of the grater.
Put in a bowl with raisins and nuts, then add salt, pepper and oil, and toss well.
Just before serving, toss the vinegar in.
