Perugia Ham And Cheese Pie
|All purpose flour||2 Cup (32 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Minced cooked ham||1 1⁄2 Cup (24 tbs)|
|Shredded swiss cheese||1⁄2 Cup (8 tbs)|
|Diced bel paese cheese||1⁄2 Cup (8 tbs)|
|Egg yolk||1 , beaten|
Combine flour and salt in a bowl.
Cut in butter with pastry blender or two knives until pieces are small.
Add eggs and stir in milk to form a soft dough.
Knead dough lightly; divide in two equal portions.
Roll out one portion on a lightly floured surface into a rectangle large enough to line the bottom and sides of an 11 x7 inch baking pan.
Place dough in pan and cover with ham and cheese.
Bring dough on sides of pan down over the meat and cheese.
Roll out the remaining dough to form an 11 x7 inch rectangle and place on top of filling.
Press edges of top crust with a fork to seal to bottom crust.
Prick top with fork in several places, and brush with egg yolk.
Bake at 425Â°F 10 minutes.
Turn oven control to 350Â°F and bake 10 minutes.
Cut into rectangles and serve warm.
