Sift flour, salt and cinnamon into large bowl.
Make a well in the center and add the eggs, then mix with your fingers, adding another egg if necessary, until you have a smooth dough.
Knead well and place under an inverted bowl.
Heat 275 cm of oil in a large frying pan.
Break off some of the dough and roll it until it is 1/2"/1 cm thick.
Cut into 1/4"1/2cm pieces.
When oil is hot, add the pieces and cook until golden.
Remove and drain on paper towels, and continue until all the dough is used.
Heat the honey in a saucepan until it becomes thin, then put struffoli in a bowl and drizzle honey over the top.
Sprinkle sugar over all, and toss until honey and sugar are distributed evenly.
Wet your hands and shape struffoli into a pyramid.
