Polio Al Forno Con Limone

Ingredients
  Chicken 4 Pound
  Olive oil 4 Tablespoon
  Tarragon 1 Teaspoon
  Salt 1 Teaspoon
  Lemons 2
Directions

Preheat oven to 350°F./180°C.
Wash chicken inside and out, and dry thoroughly.
Rub skin with oil, sprinkle with tarragon and salt, and place in roasting pan.
Cut lemons in half and squeeze juice over the top of the bird.
Cut halves into smaller pieces and place in pan.
Roast in oven for 1/2-2 hours, basting occasionally.
Remove chicken and let sit for 10 minutes before carving to let the juices settle.
