Gluten Free Cheese Pizza

Ingredients
  Rice flour 2 Cup (32 tbs)
  Egg 1
  Granulated sugar 2 Teaspoon
  Vinegar 1⁄2 Teaspoon
  Xanthan gum 2 Teaspoon
  Olive oil/Canola oil 2 Tablespoon
  Dry yeast 2 Teaspoon
  Milk 1 Cup (16 tbs), warmed
  Salt 1 Teaspoon
  Pizza sauce 1 1⁄2 Cup (24 tbs)
  Shredded pizza cheese 2 Cup (32 tbs)
For rice flour
  Brown rice flour 6 Cup (96 tbs)
  Potato starch 2 Cup (32 tbs)
  Tapioca flour 1 Cup (16 tbs)
Directions

¼ sheet pan.375* oven. In a stand up mixer with the paddle attachment, combine all of the dry ingredients. In a small bowl, combine all of the wet ingredients. Slowly add the wet to the dry with the mixer on low. Once the wet is in the bowl, increase the speed to medium and mix for 3 minutes. Spray a ¼ sheet pan (8” x 6”) with canola spray. Scoop the dough onto the pan. Wet your finger and spread the dough out evenly. Cover the dough with plastic wrap and place in a warm area to rise about 20 minutes. pread the sauce evenly over the dough. Spread the cheese evenly over the sauce. Add any favorite toppings. Bake in a 375* oven for about 30 minutes until the crust is golden and the cheese is melted.

Rice Flour Blend
Combine all of the flours and store in a Ziploc bag. This will give you enough to make 4 pizzas. Store in the refrigerator.
