Bolognese Meat Sauce (Ragu Bolognese)
|Onion||1 Medium, finely chopped|
|Carrot||1 Small, finely chopped|
|Celery stalks||1 Small, finely chopped|
|Ground beef||3⁄4 Pound|
|Ground lean pork||1⁄4 Pound|
|Tomato sauce/Tomato paste||1⁄4 Cup (4 tbs)|
|White wine||1⁄2 Cup (8 tbs)|
|Beef broth/Beef stock||1 Cup (16 tbs)|
Melt butter in a skillet.
Stir in onion, carrot, and celery.
Cook until tender.
Add meat and cook over low heat 10 to 15 minutes.
Add tomato sauce, wine, 1/4 cup broth, salt, and pepper; mix well.
Simmer about 1 1/4 hours.
Stir in remaining broth, a small amount at a time, while the sauce is simmering.
Sauce should be thick.
