Bolognese Meat Sauce (Ragu Bolognese)

  Butter 2 Tablespoon
  Onion 1 Medium, finely chopped
  Carrot 1 Small, finely chopped
  Celery stalks 1 Small, finely chopped
  Ground beef 3⁄4 Pound
  Ground lean pork 1⁄4 Pound
  Tomato sauce/Tomato paste 1⁄4 Cup (4 tbs)
  White wine 1⁄2 Cup (8 tbs)
  Beef broth/Beef stock 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon

Melt butter in a skillet.
Stir in onion, carrot, and celery.
Cook until tender.
Add meat and cook over low heat 10 to 15 minutes.
Add tomato sauce, wine, 1/4 cup broth, salt, and pepper; mix well.
Simmer about 1 1/4 hours.
Stir in remaining broth, a small amount at a time, while the sauce is simmering.
Sauce should be thick.
