Chicken Dumplings (Gnocchi Con Polio)
|Potatoes||5 Medium, peeled and cooked|
|Cooked chicken||1 Cup (16 tbs), ground|
|Grated parmesan cheese||30 Gram (1/4 cup)|
|Flour||1 Cup (16 tbs)|
Mash the potatoes.
Mix with the chicken, cheese, nutmeg, flour, egg yolks and salt and pepper to taste.
Place on a board and knead until smooth.
Add more flour if necessary. .
Roll out dough to a thickness, of 1/2 inch (one cm).
Cut into one inch (21/2 cm) squares.
Cook in boiling salted water for about ten minutes.
Drain and serve with sauce of your choice.
