Chicken Cacciatore

Ingredients
  Marinara with mushrooms sauce 2 Cup (32 tbs)
  Onion 1 Medium, chopped
  Celery stalks 2 Large, chopped
  Carrots 2 Medium, sliced
  Bone in chicken breasts/Chicken thighs 4
  Chicken stock/White wine 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
Directions

Put chopped vegetables into lg.skillet and arrange chicken pieces, skin side up, in a single layer on top of them.
Salt and pepper to taste.
Pour wine or stock over and cover skillet.
Cook over medium heat 15 - 20 minutes or just until thickest piece of chicken shows no pink flesh when tested with point of sharp knife.
If using bone in chicken, check near bone.
Holding each piece of chicken with a fork, use a second fork to pull off skin and discard.
Pour marinara with mushroomssauce over chicken and vegetables and heat.
Serve with pasta or rice.
