Italian Barbecued Chicken
|Frying chickens||2 , cut up|
|Sweet basil||2 Tablespoon|
|Sherry||1⁄4 Cup (4 tbs)|
Sprinkle chickens with salt and pepper as for frying.
Add 1 tablespoon each sweet basil and rosemary; mix together thoroughly.
Melt 2 sticks margarine in shallow baking pan; brown chicken pieces slightly.
Melt remaining stick of margarine in small saucepan; add remaining crushed sweet basil and rosemary.
Mix until thoroughly saturated with margarine.
Pour mixture over browned chicken pieces in baking pan.
Cook in 400 degree oven for 1 hour, uncovered.
Turn chicken after approximately 30 minutes.
